One-Pot Pasta with Ricotta and Lemon

4 cups water

12 oz pasta
1 cup ricotta cheese
1/4 cup grated Parmesan cheese (optional)
1 lemon (zested)
1 lemon (juiced)
1/4 tsp black pepper
1/2 tsp red pepper flakes
1/4 cup fresh basil (chopped)

Place water over high heat and bring it to a boil.

Add salt to the boiling water.

Add pasta to the boiling water and cook until done.

Remove one cup of pasta water and set it aside.

Drain the rest of the pasta water.

In the same pan, add ricotta cheese and parmesan cheese.

Add the zest of one lemon and the juice of one lemon to the cheese mixture.

Stir the cheese mixture together until combined, keeping the burner over medium low heat.

Add one half teaspoon black pepper, a pinch of red pepper flakes, and one half teaspoon of dried basil to the mixture.

Pour in the drained pasta and stir together with the cheese mixture.

Add reserved pasta water to the pasta mixture as desired to adjust the sauce thickness.
