60ml boiling water

1/2 tsp baking powder
1 tbsp psyllium husk
salt to taste
125ml dairy-free yogurt
1/2 shredded cucumber
black pepper

Add 90g bulgur wheat to a bowl and pour in 60ml boiling water. Set aside for 5 minutes.

Slice 1 onion and add it to a lightly oiled skillet. Cook until translucent.

Grate 1 small sweet potato (120g).

Chop 2 garlic cloves and add to the skillet with the onion. Cook for about 3-5 minutes.

Add 240g cooked chickpeas (1 can), cooked onion, sweet potato, and garlic to a blender. Blend until pureed.

Add 20g fresh parsley, 1 tsp ground coriander, 1/2 tbsp ground cumin, 1/2 tsp baking powder, 1 tbsp psyllium husk, and salt to taste to the blended mixture. Mix well.

Set the mixture aside for 5 minutes.

To make the sauce, combine 125ml dairy-free yogurt with 1/2 shredded cucumber. Squeeze out liquid from the cucumber if desired. Add black pepper and salt to taste. Mix well.

Shape the mixture into patties, each about 2oz (60-70g).

Fry the patties in a skillet with a little oil until golden brown, about 2 minutes on each side.

Alternatively, transfer the patties to a baking tray, spray or drizzle with oil, and bake in a preheated oven at 425°F (220°C) for 15 minutes.

Serve the patties topped with the dairy-free yogurt sauce or your favorite sauce.
