Make a gluten-free pie crust using prepackaged flour.
Add 12 tablespoons of cold butter, chopped into pieces, and 8 tablespoons of vegetable shortening (Crisco), also chopped into pieces.
Pulse the mixture 10 times for about one second each time until combined.
Transfer the mixture to a bowl and add 6 tablespoons of ice water, mixing until a firm dough forms.
Shape the dough into a disc, wrap it tightly in plastic, and refrigerate for 30 minutes.
Dust a surface with gluten-free all-purpose flour and roll out the disc into a 12-inch circle, dusting the roller as needed to prevent sticking.
Transfer the rolled dough to a pie pan, repairing any breaks by squeezing the dough into place.
Preheat the oven to 425°F (220°C).
Prick the bottom of the pie crust to prevent it from rising during baking.
In a bowl, combine 6 apples (3 Granny Smith and 3 Golden Delicious), 3/4 cup sugar, 1/2 cup dried cranberries, 2 tablespoons cornstarch, 2 teaspoons lemon juice, and 1 teaspoon cinnamon, mixing well.
Pour the apple filling into the prepared pie crust.
Cover the pie with a top crust, trimming excess dough and crimping the edges with a fork.
Make slices in the top crust to allow steam to escape.
Bake the pie in the preheated oven at 425°F (220°C) for 12 minutes.
Reduce the oven temperature to 350°F (175°C) and continue baking for 30 to 40 minutes, until the crust is golden brown and juices are bubbling through the slits.
