Start by preparing the apple pockets dough with sunflower spread and icing sugar.
Add 1 egg and a mix of gluten-free flour and cassava flour (half and half).
Mix until the dough pulls away from the edges of the bowl, indicating it's ready.
Wrap the dough in plastic or place in a ziplock bag and chill in the fridge for at least 1 hour.
Prepare the apple filling by cutting apples into small cubes and adding sugar and water to cover them.

Bake the crust in the oven until set, then let it cool.
For the cheesecake filling, use 32 ounces of cream cheese at room temperature.
Crack 4 eggs into a separate bowl before adding them to the mixture to avoid spoiling the whole batch.
Whisk the eggs over simmering water with brown sugar until they lighten in color and form a thick foam.
Set the egg mixture aside to cool while preparing the other ingredients.
Bloom gelatin in a cold bowl with cold cream for the cheesecake setting.
