In modern times, variations have emerged, and simit can be found in bakeries around the world, showcasing its universal appeal as a delicious and versatile bread.

Add 1 cup lukewarm water and 1 cup milk to a bowl.
Stir in 2 tablespoons sugar and 30 grams of fresh yeast, then add 1/2 cup of flour and mix lightly to activate the yeast.
Let the mixture sit until frothy and active.
Add 1/2 cup of vegetable oil and olive oil mixture and 2 eggs (whites into the dough, yolks reserved for egg wash).
Mix in 5 cups of flour and 2 teaspoons of salt, then add 1 teaspoon of mahlep powder for flavor.
Knead the dough until soft and slightly sticky, then add 60 grams of room temperature butter.
Shape the dough into a ball, cover, and let it rise until doubled in size.
For the filling, mix ricotta cheese, Turkish white cheese, chopped parsley, and a little salt.
Once the dough has risen, cut it into 10-15 pieces and shape each into a ball.
Flatten each ball, add cheese filling, fold, and seal.
Place on a baking tray and cover to let rise for another 30 minutes.
Preheat the oven to 200°C (392°F).
Egg wash the pogacas and sprinkle with nigella seeds and sesame seeds before baking.
Bake in the preheated oven for 20-25 minutes until golden brown.
