Welcome to the Brooklyn Brothers cooking channel, today we're making pasta spaghetti pie.
Start by preparing the tomato sauce: puree 2 cans of whole plum tomatoes in a blender.
Add about 1/2 cup of olive oil to a pot and heat it up.
Fry chopped onions in the pot until translucent, then add black pepper and fresh basil, tearing it up as you go.
Add garlic and fry until golden brown, then add the pureed tomatoes and 1 tablespoon of parmesan cheese.
Season with 2 teaspoons of salt and let the sauce cook for about 20 minutes, stirring occasionally.
In another pan, add about 1 tablespoon of olive oil and fry the Italian sausage until cooked through.
Boil water in a pot, add salt, and cook 1 pound of spaghetti until al dente, then drain it.
In a bowl, combine the drained spaghetti with half of the tomato sauce and diced fresh parsley.
In a separate bowl, mix eggs with 1/4 cup of milk and 1/2 teaspoon of black pepper.
Heat a 12-inch cast iron skillet and add 1/4 cup of olive oil.
Pour the egg mixture over the spaghetti and mix well.
Transfer the spaghetti mixture into the hot cast iron skillet, smoothing it out on top.
Cook on medium-low heat for about 7 minutes until the edges begin to set.
Preheat the oven to broil and place the skillet in the oven for about 8-10 minutes, keeping an eye on it to prevent burning.
Let the frittata rest for about 10 minutes before plating.
