In a medium bowl, combine whole wheat pastry flour, almond flour, baking soda, baking powder, and salt. Mix well and set aside.

In a large bowl, combine butter flavored coconut oil, coconut sugar, and granulated sugar. Beat until light and fluffy.

Stir in 1 egg, almond milk, and vanilla extract until combined.

Stir in the flour mixture and mix until combined.

Add whole oats and dried cranberries, stirring until everything is well combined.

Roll a heaping tablespoon of dough into a ball and place it on a prepared sheet pan, separating each ball by 1 inch to allow room for spreading.

Bake the cookies for 10 minutes at 375°F on a pan lined with parchment paper.
