In a bowl, mix together 1 cup flour, 1/2 cup corn starch, 1 tablespoon powdered sugar, 1 teaspoon baking powder, 3/4 teaspoon iodized salt, and 1/2 teaspoon black pepper to create the dredge.
In another bowl, whisk together 1 egg, 3/4 cup buttermilk, and 1/4 cup pickle juice to create the batter.
Dip each chicken patty into the egg wash, then into the flour mixture, ensuring they are fully coated.
For a thicker breading, repeat the process of dipping in the egg wash and then the flour mixture again.
Heat the fryer to 350°F and preheat the basket by dipping it in the oil briefly.
Carefully place the chicken patty into the hot oil and fry for about 6 minutes until golden brown.
While the chicken is frying, prepare the sauce by mixing mayonnaise, barbecue sauce, Dijon mustard, and honey in a bowl.
Toast the buns and spread a generous amount of sauce on each bun.
Add pickles to the bun and place the fried chicken patty on top.
