Traditionally made from soybeans, tofu is celebrated for its versatility and ability to absorb flavors from spices and sauces. In India, it is often used in curries and stir-fries, making it a popular protein source for vegetarians. Homemade tofu allows for customization in texture and flavor, and it has gained popularity globally as a health-conscious alternative to meat.

Ingredients

  • soybeans

  • nigari
  • salt
  • lemon juice
  • vinegar
  • ginger
  • garlic
  • turmeric
  • black pepper
  • chili powder

  • cumin
  • sesame oil

Instructions

  1. 1Soak soybeans in water for 8 hours or overnight.
  2. 2Drain and rinse the soaked soybeans.
  3. 3Blend the soybeans with fresh water until smooth and creamy.
  4. 4Strain the blended mixture through a cheesecloth into a large pot to extract soy milk.
  5. 5Heat the soy milk over medium heat until it reaches a gentle boil, stirring occasionally.
  6. 6Dissolve nigari in a small amount of warm water.
  7. 7Remove the soy milk from heat and stir in the nigari solution gently.
  8. 8Let the mixture sit for 15-20 minutes to allow curds to form.
  9. 9Line a tofu mold or a small container with cheesecloth.
  10. 10Spoon the curds into the mold, pressing down to remove excess liquid.
  11. 11Fold the cheesecloth over the top of the curds and place a weight on top to press the tofu.
  12. 12Let the tofu sit for 30 minutes to firm up.
  13. 13Unwrap the tofu and cut into desired shapes.
  14. 14Store the tofu in water in the refrigerator, changing the water daily.
