Preheat the grill or prepare an oven/stove for grilling.
Roast 3 large peppers, 1/2 onion, 3 cloves of garlic, and 2 tomatoes on the grill until charred.
Once roasted, place the peppers, onion, garlic, and tomatoes in a Ziploc bag to steam and cool.
Peel the skin off the peppers, being careful as they are hot; remove seeds if desired.
Peel the onion and garlic; the garlic should be soft and roasted.
Peel the tomatoes, remove the core, and ensure to discard excess juice to avoid a watery salad.
Chop the roasted vegetables (peppers, onion, garlic, tomatoes) into desired consistency, either chunky or pureed.
If making a salad for immediate consumption, season with olive oil, 1/2 teaspoon coriander powder, and salt to taste.
For storage, do not season; instead, place in a Ziploc bag and freeze for up to a month.
To serve, add tuna, olives, and capers for decoration, and optionally boiled eggs.
