Nutritional yeast is dairy-free and adds a cheesy flavor.
Add 1 and 1/2 cups of lukewarm water to an electric mixing bowl.
Add 2 teaspoons and 1/4 teaspoon of dry active yeast to the water.
Add 2 tablespoons of brown sugar to the mixture.
Whisk the mixture well and let it sit for 5 minutes to activate the yeast.
Add 1/4 cup of vegetable oil and 1 teaspoon of salt to the activated yeast mixture.
Add 4 cups of all-purpose flour to the bowl.
Mix the ingredients in the electric mixer and knead for about 5 minutes.
Dump the dough out and knead by hand until smooth.
Spray a bowl with oil, place the dough back in, cover it, and let it rise in a warm place for at least 1 hour.
After an hour, check the dough; it should have doubled in size without being punched down.
Weigh the dough pieces; aim for about 170 grams each for larger pretzels.
Stretch the dough and shape it into pretzel forms by crossing and twisting.
Prepare a baking soda bath by adding 1/4 cup of baking soda to a pan of hot water.
Dip each pretzel into the baking soda bath.
Line a cookie tray with parchment paper and place the pretzels on it.
Brush the pretzels with egg wash for a golden brown finish.
Preheat the oven to 450°F and bake the pretzels for around 10 minutes.
Check the pretzels after 10 minutes; they should be golden brown and crunchy on the outside.
