Marinate flank steak in olive oil, minced garlic, chopped parsley, salt, and black pepper for at least 30 minutes.
Preheat grill to medium-high heat.
Grill the flank steak for 4-5 minutes on each side for medium-rare, or until desired doneness.
Remove steak from grill and let it rest for 5 minutes before slicing.
Slice the flank steak against the grain into thin strips.
Cut ciabatta bread in half and toast lightly on the grill.
Spread chimichurri sauce on the bottom half of the toasted bread.
Layer sliced flank steak on top of the chimichurri sauce.
Add lettuce, tomato, onion, avocado, and cheese on top of the steak.
Cover with the top half of the ciabatta bread and press gently.
Slice the sandwich in half and serve immediately.
