Choy Sum with Garlic

1 tsp sugar

Cut the washed choy sum, separating the stems and leaves.

Cut the stems at an angle for better appearance.

Remove the white part at the bottom of the choy sum until it’s no longer visible.

Smash and mince roughly half of the garlic, and slice the other half into thin slices.

Slice the ginger into roughly 1/8 inch slices, then cut into quarters.

Heat the wok on high heat.

Add 1 tbsp of oil to the hot wok, then lower the heat.

Add minced garlic and sliced ginger to the wok, stir-frying until fragrant for about 15-20 seconds.

Add the choy sum stems to the wok and stir-fry for about 30 seconds.

Add the choy sum leaves to the wok and mix them in.

Turn up the heat and sprinkle in 1 tsp of cooking wine and 1 tsp of sugar, stir for another 30 seconds.

Cover the wok and let it steam on medium or low heat for a few minutes until soft.

Uncover the wok after a minute and a half to check if the vegetables are soft.

Bring the heat back up to high and stir-fry the choy sum for another minute.

Add scant 1/2 tsp of salt and drizzle some finishing oil on top.
