60g choy sum
1 slice ginger
1/2 tsp salt
1 tsp lemon juice
2 tbsp rice vinegar
1 tbsp sugar
1 tsp toasted white sesame seeds

Return to the turnip and choy sum, grip all the vegetables in the bowl in your hand and squeeze out any excess liquid, repeating 2 or 3 times.
