Peel the potatoes and cut them into quarters.
Boil the potatoes until tender, about 20 minutes.
Put the boiled potatoes back in the pan to dry them off.
Melt 1 tablespoon of salted dairy butter and add it to the potatoes.
Mash the potatoes until smooth, adding more butter if needed.
Add 2 dessert spoonfuls of Hoxsey flour and a pinch of salt to the mashed potatoes and mix until it forms a sticky dough.
Sprinkle flour on a clean work surface and knead the dough gently, adding more flour if it feels too sticky.
Divide the dough into two batches and shape each into a patty by hand, using your fingers to measure.
Cut the patties into quarters using a pallet knife.
Heat a large non-stick pan and sprinkle a little flour to prevent sticking.
Cook the patties in the pan for about 3 minutes on each side until browned, flipping carefully to avoid breaking them.
