Cook until potatoes are soft, about 15-20 minutes.
Drain excess water and mash the mixture until smooth.
In a separate pan, heat vegetable oil over medium heat.
Sauté chopped onions and garlic until translucent, about 3-4 minutes.
Add chopped tomatoes, green bell pepper, and carrots; cook until softened, about 5-7 minutes.
Stir in the mashed mixture and season with salt and black pepper.
Add chopped spinach and cook until wilted, about 2-3 minutes.
Finish with a squeeze of lemon juice before serving.
