6 medium egg yolks

Caramelize 1 tablespoon of sugar in each mold until golden brown.

In a mixing bowl, combine 6 egg yolks, 2 whole eggs, 1 cup milk, 1/2 cup sugar, 12.5 grams powdered mango juice, a pinch of salt, a pinch of nutmeg, and 1 teaspoon vanilla. Stir gently until well blended.

Strain the mixture to avoid lumps and bubbles.

Pour the mixture into the molds.

Cover the molds with aluminum foil.

Place the molds in a turbo broiler with boiling water and steam bake for a minimum of 1 hour.

After cooking, refrigerate overnight.

Unmold the mango flan onto an oval plate.

Garnish with thinly sliced mangoes around the flan and on top, and add red cow for color.
