1

Pour 4 cups of water into a saucepan and add 1 cup of salt, 1 cup of brown sugar, and 1/2 cup of maple syrup.

2

Stir and dissolve the mixture over medium heat.

3

Add 2 1/2 tablespoons of garlic, 1/2 teaspoon of cloves, 1 teaspoon of black pepper, 1 teaspoon of onion, and 1/2 teaspoon of coriander to the liquid.

4

Add the curing salt and stir until fully dissolved, then remove from heat.

5

Pour 4 cups of ice water into the brine to cool it down.

6

Place the pork loin in a Ziploc bag and pour the curing brine over it, removing as much air as possible.

7

Let the pork loin cure in the refrigerator for 4 to 5 days, flipping it daily.

8

After curing, place the pork loin in a large bucket of chilled ice water for 1 hour to reduce saltiness.

9

Remove the pork loin from the water and dry it off.

10

Prepare the grill for indirect smoking at 200-225°F using apple wood smoke.

11

Place the pork loin on the grill fat side up and smoke for about 2 hours until it reaches an internal temperature of 145°F.

12

Remove from the grill and let it rest until fully cooled.
