Add 80 g of light sour cream and 1 tablespoon of homemade vanilla extract.
Crack in 1 room temperature egg, ensuring no shell gets in.
Mix all wet ingredients together until well combined.
In a separate bowl, combine 420 g of all-purpose flour, 0.5 teaspoon of sea salt, 1 packet of instant yeast, and 100 g of Monk sweetener.
Mix the dry ingredients into a shaggy dough.
Knead the dough until smooth and elastic, about 5-7 minutes.
Place the kneaded dough in a clean bowl sprayed with olive oil, cover with a bunnet, and let it rest in a warm place for 5-10 minutes.
Prepare the filling by zesting 3 medium tangerines and mixing the zest with 1 cup of Monk sweetener.
Roll the dough out on a floured counter into a rectangular shape.
Spread 1 stick of softened butter over the rolled dough.
Sprinkle the tangerine Monk sweetener filling evenly over the buttered dough.
Roll the dough tightly starting from the nearest edge.
Cut the rolled dough using dental floss for clean cuts.
Cover the cut rolls and place them in the oven to proof for about 1 hour.
Prepare the frosting by mixing the zest of 1 tangerine with 1 stick of butter and 8 oz of mascarpone cream cheese using a hand mixer.
Add 0.5 cup of powdered sugar and 1 tablespoon of vanilla to the frosting mixture and mix well.
After 1 hour, check that the rolls have risen and preheat the oven to 350°F.
Bake the rolls for 20-30 minutes, checking for doneness with a tester.
Allow the rolls to cool for about 5 minutes before frosting them with the cream cheese frosting.
Let the frosted rolls sit in the refrigerator for about 5 minutes before serving.
