Make Dee's special sauce by combining 1/2 cup Hellman's mayonnaise, 1 tablespoon soy sauce, 1 tablespoon Worcestershire sauce, a pinch of salt, fresh cracked black pepper, 1 tablespoon Dijon mustard, 1 tablespoon gochujang, ketchup, and honey in a bowl.
Stir the sauce ingredients together and adjust seasoning to taste, then refrigerate.
Ask the butcher for 1 pound of 80/20 ground chuck and 1/2 pound of ground brisket, then mix them together gently to avoid overworking the meat.
Shape the meat mixture into patties about the size of a nectarine, making an indentation in the center of each patty.
Season both sides of the patties generously with kosher salt and fresh cracked black pepper.
Preheat the grill to about 500 degrees Fahrenheit.
Place the patties on the hot grill and cook for about 3 minutes on the first side until charred.
Flip the patties and cook for an additional 1.5 to 2 minutes for medium-rare, adding 2 slices of American cheese on top to melt during the last minute.
Remove the patties from the grill and let them rest on a plate.
Butter both sides of Martin's potato rolls and toast them on a griddle pan until golden brown.
Assemble the burger by placing the patty with melted cheese on the bottom bun, then add Dee's special sauce, lettuce, tomato, onion, and pickles before placing the top bun.
