Lay down two sesame seed buns on the griddle.
Anoint the griddle with a little bit of bacon fat.
Add caramelized onions to the griddle to warm them up.
Lay down the burger patty on the griddle and sprinkle with kosher salt.
Flip the burger once juices start to come through.
Transfer the burger to a cooler side of the grill.
Add caramelized onions on top of the burger patty.
Spread the mayo and mustard mixture on the top bun.
Place regular mayonnaise on the bottom bun.
Add red hamburger relish on top of the mayo on the bottom bun.
Layer on 1.5 slices of tomato and sliced iceberg lettuce.
Add American cheese on top of the burger to let it melt.
Cut the burger in half to serve.
