Chop 800 grams of chuck steak and 200 grams of rib cap into thin strips using a sharp knife.
Cut the thin strips into small pieces to create a fine texture, similar to steak tartare.
Mix the chopped beef by hand to evenly distribute the fat from the rib cap.
Form the beef mixture into balls weighing approximately 150 grams each.
Press the balls into patties using a burger press and refrigerate for 4 to 6 hours to set.
Heat a pan until smoking hot and place the patties in the pan.
Cook the patties for 3 minutes on one side, then flip them over.
Season the flipped patties with salt and black pepper and place a slice of mild cheddar cheese on top.
Cook for an additional 3 minutes to achieve medium doneness and melt the cheese.
Prepare the burger by layering lettuce, homemade pickles, and red onion relish on the bottom bun.
Add the cooked burger patty with melted cheese on top of the layers.
Top the burger with crispy smoked streaky bacon and place the top bun on to complete the burger.
