Roast 100 grams of sesame seeds in a pan over low to medium flame until lightly colored.
Let the roasted sesame seeds cool down before blending them in a mixer jar.
Add 2-3 tablespoons of olive oil to the blended sesame seeds to make tahini sauce.
In a steel pot, soak 1 cup of chickpeas overnight and change the water.
Add the soaked chickpeas to the steel pot, cover, and cook on low flame for 45 minutes with 1/2 teaspoon baking soda.
Once cooked, drain the chickpeas and let them cool down.
In a copper bowl, add the cooked chickpeas, 3-4 cloves of garlic, and 1/4 cup of water, then blend until smooth.
Add 3 tablespoons of fresh lemon juice and 1/2 cup of crushed ice to the mixture and continue blending.
Add 1/2 teaspoon of salt and 1/2 teaspoon of lemon salt, adjusting to taste, and blend for another 2 minutes.
Finally, add the tahini sauce to the chickpea mixture and blend for 5 minutes until creamy.
