2 tablespoons chili bean paste
1/2 cup dark soy sauce
1/2 cup light soy sauce
1/2 cup wine or Chinese wine
2 tablespoons oyster sauce
10 to 12 cups water
2 to 3 bay leaves
black pepper
salt

Remove extra fat or membrane from beef shank.

Boil the beef shank for 5 minutes, then remove and rinse clean.
