2 lb sirloin beef tips
1/2 teaspoon salt
1/2 teaspoon black pepper (freshly ground)
3 Tb butter (divided use)
1 Tb extra virgin olive oil
1 onion (small, finely diced)
3 cloves garlic (minced)
4 c beef broth (or stock)
2 Tb Worcestershire sauce
1/2 teaspoon thyme (dry)
1 bay leaf
1 teaspoon parsley (dry)
1/4 c cold water
3 Tb tapioca starch (or arrowroot flour)

To begin, sprinkle the beef tips with salt and pepper.

Heat a tablespoon of the butter and the extra virgin olive oil in a Dutch oven over medium heat.

Add the meat and brown it on all sides, about 3-4 minutes. Transfer it to a plate or dish.

Add the remaining butter and sauté the onion until it is tender, about 4 minutes.

Add in the minced garlic and cook another minute.

Whisk in the beef broth, Worcestershire sauce, and thyme.

Add the beef tips and the bay leaf to the pot. Bring it all to a boil, then reduce the heat to a simmer. Let it cook uncovered for 30-40 minutes or until the beef is nice and tender.

Remove the bay leaf.

Briefly bring the beef tips & broth up to a boil again.

Combine the cold water and tapioca starch in a small dish and whisk smooth.

Pour in the tapioca slurry and stir. Allow it to cook 1 minute to thicken.
