Instructions
- 1Heat olive oil in a large skillet over medium-high heat until shimmering.
- 2Season beef tips with salt and black pepper.
- 3Add beef tips to the skillet and sear until browned on all sides, about 5-7 minutes.
- 4Remove beef tips from the skillet and set aside.
- 5In the same skillet, add chopped onion, garlic, carrots, and celery; sauté until softened, about 5 minutes.
- 6Add sliced mushrooms and cook until they release moisture, about 3-4 minutes.
- 7Stir in beef broth, soy sauce, Worcestershire sauce, bay leaves, and thyme.
- 8Return the beef tips to the skillet and bring to a simmer.
- 9Cover and reduce heat to low; cook for 1-1.5 hours until beef is tender.
- 10In a small bowl, mix cornstarch with water to create a slurry.
- 11Stir the slurry into the skillet and cook until the sauce thickens, about 2-3 minutes.
- 12Remove bay leaves before serving.
- 13Serve beef tips over rice or noodles, garnished with fresh herbs if desired.

Preheat the oven to 375°F for the chicken spaghetti.
Chop up 2 cooked chicken breasts and set aside.
Cook and drain 1 pound of spaghetti, then set aside.
Combine the chopped chicken with 2 cans of cream of chicken soup and 1 can of Rotel (not drained).
Add 1/2 teaspoon of black pepper, 1 teaspoon of onion powder, 1 teaspoon of paprika, 1 teaspoon of parsley, and 1 teaspoon of garlic powder to the mixture and stir well.
Stir in 1 cup of shredded Colby Jack cheese into the chicken mixture.
Spray a 9x13 baking dish and add the cooked spaghetti to the bottom without stirring.
Pour the chicken mixture over the spaghetti, then add another cup of Colby Jack cheese on top.
Bake in the oven at 375°F for 30 minutes, watching the cheese to prevent burning.
After baking, stir everything together before serving, adding sour cream on top if desired.
For the beef tips and gravy, preheat the oven to 350°F.
Cut a 2 lb chuck roast into big chunks and brown the outside in a skillet with a little oil for about 5-7 minutes.
Prepare the sauce by mixing 10 oz of beef broth with cream of mushroom soup, 1 envelope of onion soup mix, and 1 packet of brown gravy mix.
Pour the sauce over the browned chuck roast in a baking dish, ensuring all pieces are covered.
Cover the dish with foil and bake in the preheated oven for 2 to 2.5 hours, or until the meat is done.
Serve the beef tips with mashed potatoes and green beans.
