Shrimp is often more affordable and has a similar texture.
Prepare the ingredients: finely chop garlic and onion, and have spices ready (parsley, salt, paprika, black pepper, bay leaves, and red pepper flakes).
Add extra virgin olive oil to a pot and heat it.
Add minced garlic to the oil, being careful not to burn it, and sauté briefly.
Add chopped onion and sauté on low heat until it becomes translucent.
Once the onion is at the desired point, add crushed tomato and sauté it briefly.
Season the mixture with salt.
Add the squid to the pot and mix it in with the sautéed ingredients.
Add all the spices and fish broth to the pot, then pour in red wine.
Stir everything together and bring to high heat.
Cover the pot and let it cook for 30 to 40 minutes, checking occasionally.
After cooking, remove excess broth from the squid and use a gluten-free thickener to achieve desired consistency, stirring to avoid lumps.
Blend the mixture to make it smooth and fine.
Let the sauce thicken slightly before serving.
