Ingredients

  • 4 large russet potatoes
  • 2 cups vegetable oil
  • 1 tsp salt
  • 1/2 tsp paprika (optional)
  • 1/2 tsp garlic powder (optional)

Instructions

  1. 1Wash and peel the potatoes.
  2. 2Slice the potatoes thinly using a mandoline or a sharp knife.
  3. 3Soak the potato slices in cold water for at least 30 minutes to remove excess starch.
  4. 4Drain the potato slices and pat them dry with a clean towel.
  5. 5In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
  6. 6Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pot.
  7. 7Fry the potato slices for about 3-5 minutes or until they are golden brown and crispy.
  8. 8Remove the chips from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. 9While still hot, sprinkle the chips with salt and any additional seasonings like paprika or garlic powder if desired.
  10. 10Repeat the frying process with the remaining potato slices.
