Creamy Vodka Sauce

1 tablespoon olive oil
1 yellow onion, minced
4 cloves garlic, minced
1/4 teaspoon crushed red pepper
1 can (28 oz.) crushed tomatoes
1/4 cup vodka
2 tablespoons tomato paste
1 tablespoon balsamic vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup half and half
3 tablespoons Parmesan cheese, grated

In Dutch oven over medium heat, add olive oil. Once hot, cook onion 5 to 7 minutes, until very tender. Add garlic; continue cooking 1 minute. Stir in red pepper, tomatoes and vodka; continue cooking 5 to 7 minutes, until slightly reduced.

Stir in tomato paste, balsamic vinegar, salt and pepper. Bring to simmer; continue cooking, partially covered, 20 minutes, until slightly reduced.

Stir in half and half. Continue cooking until warmed. Stir in Parmesan cheese.

Serve and refrigerate leftovers.
