Creamy Vodka Sauce

1/2 cup unsalted butter
1 tablespoon olive oil
1 cup chopped pancetta
1 medium onion
6 cloves garlic
2 cups vodka
3 cans petite diced tomatoes
pinch of salt
fresh cracked black pepper
1/4 cup heavy cream
1/2 cup fresh torn basil

Melt 1/2 cup unsalted butter and 1 tablespoon olive oil in a pan over low heat.

Add 1 cup chopped pancetta and cook until it infuses the butter and oil.

Add 1 medium onion and sauté for about 3 minutes until fragrant but not limp.

Add 6 cloves garlic and cook for about 1 minute until softened.

Pour in 2 cups vodka, scraping up any brown bits from the bottom of the pan.

Add 3 cans of petite diced tomatoes and season with a pinch of salt and fresh cracked black pepper.

Let the sauce simmer and reduce for 10 minutes.

Finish the sauce by stirring in 1/4 cup heavy cream and 1/2 cup fresh torn basil.
