Take 1 large clove of fresh garlic and give it a whack with the side of a knife to break it down.
In a pan, add 2 tablespoons of butter and the smashed garlic. Cook until the garlic is golden brown and crispy, being careful not to overcook it.
Drain the artichokes well and chop them on a cutting board.
Wash the fresh spinach thoroughly.
Once the garlic is golden brown, add the washed spinach to the pan. It may seem like too much, but it will wilt down.
Add the chopped artichokes to the pan with the spinach.
Cook for about 10 minutes until the spinach wilts down.
Add 8 oz of cream cheese and as much mozzarella as you like to the pan.
Season with Parmesan cheese, chicken bouillon powder, garlic powder, and onion powder to taste.
Mix everything together until combined and the cream cheese begins to melt.
Taste the mixture and adjust seasoning if necessary, adding more chicken bouillon powder if desired.
Transfer the mixture to a baking dish and preheat the oven to 355°F.
Prepare thick slices of crusty bread for serving.
