1 stalk scallion
4 cloves garlic
1 tsp fresh ginger
2 tbsp pimento seeds (allspice)
1 Scotch bonnet pepper
2 tbsp fresh thyme
1/2 onion

1 medium carrot
1 green bell pepper
2 tbsp chicken seasoning
1.5 tbsp all-purpose seasoning
2 tbsp garlic powder
2 tsp onion powder
1 tsp black pepper
1-2 tbsp curry powder
1 tbsp vegetable oil

Wash chicken in lemon juice and cut into small pieces, removing the skin.

Chop scallion, onion, garlic, ginger, and carrot; cut the potato into pieces.

In a bowl, combine chicken with scallion, onion, garlic, ginger, carrot, potato, and Scotch bonnet pepper.

Add 2 tbsp chicken seasoning, 1.5 tbsp all-purpose seasoning, 2 tbsp garlic powder, 2 tsp onion powder, 1 tsp black pepper, and 1-2 tbsp curry powder to the chicken and mix well, massaging the seasoning into the meat.

In a pot, heat 1 tbsp vegetable oil over medium heat and add 2 tsp curry powder, garlic, and ginger; cook for 20 seconds to burn the curry powder.

Add seasoned chicken to the pot and cook for 4 minutes, then cover and cook for another 4 minutes on low heat.

Remove the potato from the pot and add 3 cups of water; mix well and add a little salt.

Cover and cook for 10 minutes on medium to high heat.

After 10 minutes, add the potato back along with remaining scallion, thyme, onion, and carrot; mix well.

Cover and cook for an additional 20 minutes on medium to high heat until the chicken is cooked through and the gravy thickens.
