8 Green mangoes
1 Tbsp saffron powder
1 onion finely chopped
2 Tbsp curry powder
2 Tbsp grind jeera
1/4 cup anchar massala
8 cloves garlic minced
Hot pepper to your desire
10 leaves shadow benny minced
1 dozen curry leaves minced
3 Tbsp vegetable oil
2 Tbsp Salt
6 tbsp sugar
8 cups water

Cut each mango lengthwise into 8 pieces.

Discard inner part of seed and wash.

Put water and bring to a boil, adding mangoes, 1 tbsp salt, 2 tbsp curry powder, and 1 tbsp turmeric.

Cook until tender and drain.

Heat oil in a heavy pot at medium heat. One at a time, stirring continuously, add onions, garlic, shadow benny, and curry leaves, and sauté for a minute.

Add anchar massala and 1/4 cup water, cook until thick, stirring continuously.

Add remaining sugar, 1 tbsp salt, pepper, jeera, and 1/3 cup water, stirring continuously, bringing to a boil.

Add boiled mangoes and stir until coated with the mixture.

Cook until water is reduced and mixture is tender and thick.

At this point, you can adjust salt and sugar.
