Soak 6 ounces of medjool dates in 2 cups of hot water for 10 minutes to soften.

Reserve about 3/4 cup of the soaked liquid from the dates.

Place the softened dates and the reserved water into a high-speed blender and blend until smooth.

Transfer the date paste into a saucepan and bring it to a simmer over low heat.

Add 1 tablespoon of honey to the date paste and mix well, then turn off the heat.

Pour the date paste into a container and let it cool, then store it in an airtight container in the fridge before use.

Add 2 cups of tiger nuts to a food processor and grind them by pulsing in bursts until finely ground.
