Scald 1 quart of milk by heating it just below boiling point (180°F or 82°C), stirring constantly to prevent burning.

Whisk 1 teaspoon of salt into 1/2 cup of cornmeal.

Once the milk reaches 180°F, reduce heat to low and add in the cornmeal, stirring for 10 minutes to allow the cornmeal to absorb the milk.

After 10 minutes, add in 1/2 cup of molasses and stir for another 2 minutes.

Sift in 1 and 1/2 teaspoons of ginger or cinnamon and stir for another minute until smooth.

Remove from heat and butter a 9x9 inch baking dish.
