Walking Tacos

1 cup cooked ground beef
2 tablespoons infused oil
1/4 cup scallion tips
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons taco seasoning
1/2 cup canned tomatoes
1 bag of individual-sized corn chips (like Fritos)
1/2 cup shredded cheddar cheese
1/4 cup sliced black olives
1/2 cup corn (optional)
1 cup lettuce (for garnish)
1/4 cup lactose-free sour cream
