Homemade syrup can reduce sugar content and cost.

Agar-agar is plant-based and suitable for vegans.

Add the juice of two lemons to the rind.

Pour in 100 ml of water and 75 g of sugar.

Heat the mixture slowly to dissolve the sugar and infuse the lemon zest.

Soak 20 g of gelatin leaves in cold water until soft.

Remove the lemon zest and add the softened gelatin to the hot liquid.

Add 400 ml of water and 250 ml of elderflower cordial to the mixture.

Let the mixture cool and then pour into individual glasses.

Refrigerate for around 6 hours or overnight to set.

Top with fresh strawberries tossed in icing sugar and a dollop of whipped cream before serving.
