1/2 cup cocoa powder
80 grams all-purpose flour (maida)
100 grams butter
1 cup brown sugar
1/2 teaspoon instant coffee powder
1/2 teaspoon vanilla essence
2 pinches salt

Take 1/2 cup of cocoa powder in a sieve.

Add in 80 grams of all-purpose flour and measure it as 2/3 cup, then remove 2 teaspoons of flour.

Sift the all-purpose flour and cocoa powder together.

Heat an 8-inch cast iron skillet pan on low flame and add 100 grams of butter.

Once the butter melts, add in 1 cup of brown sugar and cook on low flame until the sugar melts.

Add in 1/2 teaspoon of instant coffee powder and switch off the flame.

Add in 1/2 teaspoon of vanilla essence and stir the mixture with a spatula to cool it down.

Once cooled slightly, add in 2 pinches of salt and then add 3 eggs one by one, mixing gently after each addition.

Add in 1/4 teaspoon of baking powder and gently fold in the flour mixture.

Mix until combined, ensuring the butter and sugar mixture is off the flame to prevent scrambling the eggs.

Add in 100 grams of milk chocolate and mix, then add a little more chocolate on top of the batter.

Bake the cake for 20 to 30 minutes at 170 degrees Celsius.
