To bake potatoes in the air fryer, stab the potato with a fork and mist with cooking spray. Air fry for 30-35 minutes at 400°F (200°C) until fork tender.

Slice the cooked potato in half lengthwise. Take a spoon and carefully scoop the inside of the potato out. Save the cooked potato flesh for other recipes. The potato skins should have a ¼-½ inch thickness (0.6-1.3cm). For relaxed (non-therapeutic) keto diets, make sure to scoop the skins out really well to reduce the carbs as much as possible.

Brush the potato halves generously on all sides with the olive oil. Sprinkle on some salt and pepper.

Place the potato boats scooped side up in the air fryer basket (air fryer ovens: use the top rack position). Air fry them for 5 minutes at 400℉ (200℃). While they are air frying, cook the bacon, grate the cheese, and slice the scallions and chives.

Fill the potato peels with an equal amount of shredded cheese and bacon. To melt the cheese, pop the potato skins back in the air fryer at 350℉ (177°C) for 1-2 minutes.

To finish this appetizer, top each potato skin with a dollop of sour cream and a sprinkle of scallions and chives. Serve warm.
