Preheat the air fryer to 400°F.
Wash the potatoes thoroughly and brush the outsides with olive oil.
Sprinkle salt on the potatoes.
Place the potatoes in the air fryer basket lined with parchment paper with holes.
Cook the potatoes at 400°F for 30 minutes, then turn them over and cook for another 30 minutes until done.
Check doneness with a fork.
Let the potatoes cool slightly, then cut them in half lengthwise and scoop out some flesh into a bowl.
Return the hollowed potato halves to the air fryer for about 5 minutes to crisp the edges.
Fill the potato skins with shredded Monterey Jack and Colby cheese, crumbled bacon bits, and chopped green onions.
Return the filled potato skins to the air fryer for 2 minutes to melt the cheese.
Remove from the air fryer and add a dollop of sour cream on top before serving.
