1

Slice the onions in half, peel them, and dice into small to medium pieces.

2

Slice the garlic thinly or grate it.

3

Chop the fresh thyme and oregano, removing any large stems.

4

Butterfly the chicken breasts and slice them into even-sized filets.

5

In a mixing bowl, combine the chicken with onion powder, garlic powder, olive oil, salt, and cracked black pepper. Mix well.

6

Heat a large pan over medium-high heat and add olive oil.

7

Sear the seasoned chicken for about 3 to 3.5 minutes on each side until golden brown. Remove from the pan and set aside.

8

In the same pan, add sundried tomato oil and unsalted butter, then add the diced onions and season with salt. Sauté for 5 to 6 minutes until soft and translucent.

9

Add the sliced garlic and cook for 1 minute until fragrant.

10

Deglaze the pan with white wine and cook for about 2 minutes until reduced by 2/3.

11

Stir in Dijon mustard and cook for 30 seconds.

12

Add chicken stock, thickened cream, drained sundried tomatoes, chili flakes, salt, and cracked black pepper. Mix well and bring to a simmer.

13

Add the chopped herbs and reduce heat to low, cooking for 6 to 7 minutes.

14

Optionally, stir in grated Parmesan cheese and basil leaves, cooking for 30 seconds to infuse the flavors.

15

Return the chicken to the pan, mixing it with the sauce and cooking for about 1 minute to heat through.
