Pide Bread with Eggplant Feta Spread

Pide, often referred to as Turkish pizza, has its roots in the Anatolian region of Turkey. Traditionally, it was a dish for sharing among families and friends, often enjoyed during gatherings. The eggplant and feta spread adds a modern twist, showcasing the rich flavors of Turkish cuisine. Today, pide is popular in many countries, with various toppings reflecting local tastes, making it a beloved street food and restaurant dish alike.

Add yeast to lukewarm water and let it activate.
In a mixing bowl, combine flour and sugar, then add salt.
Once the yeast is bubbly, mix it into the flour mixture.
Knead the dough for 5 minutes until sticky.
Transfer the dough to a baking pan lined with parchment paper and spread it out.
Cover the dough with a towel and let it rise for about 50 minutes.
Prepare the eggplant by slicing it in half and brushing with oil.
Place the eggplant halves on a baking sheet and roast in the oven for about 30 minutes until soft.
Once the dough has risen, shape it and preheat the oven to 200°C (400°F).
Sprinkle water on top of the dough and optionally add poppy seeds or sesame seeds.
Bake the bread for 20-30 minutes until golden.
After roasting, scoop out the eggplant flesh and combine it with feta, heavy cream, and garlic in a bowl.
Blend the mixture until creamy, adding olive oil for consistency.
