Peel 5 eggplants.
Put eggplants in a colander, sprinkle with salt, cover with cloth, and let sit for a few hours.
Wash and dry the eggplants.
Chop 3 onions and 10 cloves of garlic.
Fry the onions in oil until translucent.
Add garlic and fry for a short time, do not over-fry.
Fry the eggplants in oil.
Add 2 tsp of turmeric and 1 tsp of pepper; fry for a minute on low heat.
Mash the eggplants in the skillet.
Add 1/2 cup water and 1 to 2 tbsp of whey to the eggplants.
Add the fried onions to the eggplants.
Close the lid and let it cook for half an hour on low heat.
Add 2 tbsp of dried mint and fry briefly with the eggplants.
Add walnuts.
