Sort through the 15 bean mix to remove any debris or stones.
Pour the beans into a pot and cover with water for a quick soak method.
Turn the stove on medium-high and cook the beans for 2 minutes, then cover and let sit for 1 hour.
Prepare the smoked turkey leg by placing it in a large pot and covering it with water.
Turn the stove on medium-high and cook the turkey for about 1.5 hours until the meat is off the bone.
After soaking, drain the beans and set them aside.
Heat a Dutch oven on medium-high and add 2 tablespoons of olive oil.
Add 2 minced garlic cloves and chopped onion to the pot and sauté until softened.
Add 4 cups of turkey broth and 1 can of diced tomatoes to the pot.
Add the drained beans, 1 cup of diced carrots, and 1 cup of diced celery to the pot.
Add 2 bay leaves, fresh thyme, black pepper, and kosher salt to taste.
Stir the mixture and check the liquid level, adding more broth if necessary.
Add the seasoning packet that came with the beans and stir well.
Cover the pot and bring the soup to a boil, then reduce the heat to a simmer.
Let the soup cook for about 1 hour, stirring occasionally.
