In a large bowl, combine 300 g (1 1/2 cups) light soft brown sugar, 3 large room temperature eggs, 200 g (1 cup) unflavored vegetable oil, 3 teaspoons vanilla extract, 110 g (1/2 cup) room temperature unsweetened yogurt, and 190 g (1 cup) blended canned pineapple. Mix until well combined.

Add the dry ingredients to the wet ingredients and fold in gently with a spatula until just combined, being careful not to overmix.

Fold in 225 g (2 cups) finely grated carrots and 100 g (1 cup) coarsely chopped walnuts or pecans until just combined.
