Instructions
- 1Preheat oven to 350°F (175°C).
- 2Grease and flour two round cake pans.
- 3In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- 4In another bowl, beat eggs, then mix in granulated sugar, brown sugar, and vegetable oil until well combined.
- 5Gradually add dry ingredients to wet ingredients, mixing until just combined.
- 6Fold in grated carrots, crushed pineapple, and chopped walnuts.
- 7Divide batter evenly between prepared pans.
- 8Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- 9Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- 10In a mixing bowl, beat cream cheese and butter until smooth.
- 11Gradually add powdered sugar and vanilla extract, mixing until creamy.
- 12Spread cream cheese frosting between the cooled cake layers and on top and sides of the cake.

- 1Prepare the ham by scoring the surface in a diamond pattern, making shallow cuts about 1 inch apart.
- 2In a bowl, mix together the brown sugar, honey, Dijon mustard, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper (if using).
- 3Rub the mixture all over the ham, ensuring it gets into the scored cuts.
- 4Preheat your smoker to 225°F (107°C).
- 5Soak the wood chips in water for at least 30 minutes before using them in the smoker.
- 6Place the ham in the smoker, bone side down, and add the soaked wood chips to the smoker box or directly on the coals.
- 7Smoke the ham for about 6-8 hours, or until the internal temperature reaches 145°F (63°C).
- 8Every hour, you can spritz the ham with apple juice or a mixture of apple juice and vinegar to keep it moist.
- 9Once done, remove the ham from the smoker and let it rest for at least 30 minutes before slicing.
- 10Slice and serve the smoked ham as desired.

Instructions
- 1In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- 2Add melted butter, salt, and 2 cups of flour to the yeast mixture. Mix until combined.
- 3Gradually add the remaining flour, kneading until the dough is smooth and elastic, about 5-7 minutes.
- 4Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 hour.
- 5Preheat the oven to 375°F (190°C).
- 6Punch down the risen dough and divide it into small balls, about the size of a golf ball.
- 7In a small bowl, mix minced garlic, chopped parsley, and olive oil. Brush the mixture over each dough ball.
- 8Place the dough balls in a greased baking dish, sprinkle with Parmesan cheese if using, and let them rise for another 30 minutes.
- 9Bake in the preheated oven for 20-25 minutes or until golden brown.
- 10Remove from the oven and brush with additional melted butter before serving.
