Crack 2 eggs into a bowl.

Scoop out both yolks and place in a small bowl.

Whisk the yolks well and set aside.

Heat some olive oil or any cooking oil in a pan.

Rinse 200g of rice until clean, drain well, and add it to the pan.

Stir fry the rice over medium heat for about 2 minutes.

Pour in 200ml of water (add 40-50ml more if you like softer rice).

Cut 3 tomatoes into small pieces and set aside.

Beat one more egg into the two leftover egg whites, salt to taste, and whisk well.
