Ingredients

  • 2 lbs beef bones
  • 10 cups water
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 1 bay leaf
  • 1 tsp black peppercorns
  • 1 tsp salt
  • 1 tsp dried thyme
  • 1 tsp dried parsley

Instructions

  1. 1Preheat your oven to 400°F (200°C).
  2. 2Place the beef bones on a baking sheet and roast in the oven for about 30 minutes until browned.
  3. 3In a large pot, combine the roasted bones, water, onion, carrots, celery, garlic, bay leaf, peppercorns, salt, thyme, and parsley.
  4. 4Bring the mixture to a boil over high heat.
  5. 5Once boiling, reduce the heat to low and let it simmer for at least 4 hours, skimming off any foam that rises to the surface.
  6. 6After simmering, strain the broth through a fine-mesh sieve into another pot or bowl, discarding the solids.
  7. 7Let the broth cool, then refrigerate it until the fat solidifies on top.
  8. 8Once cooled, remove the solidified fat and discard it, or save it for cooking.
  9. 9The bouillon can be used immediately or stored in the refrigerator for up to a week, or frozen for longer storage.
