Preheat a cast iron skillet on the stove.
Add a little bit of pork fat to the skillet.
Place the frozen beef hamburger patties in the skillet once it's sizzling.
Let one side of the burger sear for about two minutes.
Pour about one to two tablespoons of water into the skillet to create steam.
Burp the pan to prevent steam from cooking the burger too early.
Cook the burger for about seven minutes total, flipping it after three and a half minutes on the first side.
Before flipping the burger, season the top side with white pepper and garlic powder.
Flip the burger over and move it around the pan while burping it again.
Put the lid back on to let it steam slightly, but avoid over-steaming the inside of the burger.
Cook until the inside reaches your desired doneness, aiming for a medium to slightly well burger after seven minutes with a two-minute rest.
For a medium-rare burger, cook for three minutes on each side and then let it rest for two minutes.
