Pour in 250 milliliters of white or light rum, ensuring the fruits are fully submerged. Add more rum if necessary.
Cover the container and let it sit in a cool, dark place for 5 to 6 days, or up to a month for better flavor integration.
Prepare the dry ingredients by mixing 325 grams of cake flour, 2 teaspoons of baking powder, 50 grams of cocoa powder, 5 grams of salt, 0.5 teaspoon of ground cinnamon, 0.5 teaspoon of ground cloves, and 0.125 teaspoon of ground nutmeg in a bowl.
In a mixing bowl, combine 300 grams of butter, 100 grams of white sugar, 100 grams of brown sugar, and 50 grams of grated panela. Beat until creamy and well combined.
Add the 6 egg yolks to the butter and sugar mixture and mix well.
Incorporate 2 teaspoons of vanilla extract and the melted chocolate into the mixture, mixing until smooth.
Add a bit of the maceration juice to the mixture to help soften it, then gradually add the dry ingredients, mixing until just combined.
Prepare the egg whites by beating them to stiff peaks and set aside.
Fold the macerated fruits and nuts into the batter, ensuring they are evenly distributed.
Gently fold in the beaten egg whites to the batter, being careful not to deflate them.
Pour the batter into a greased and lined cake pan.
Bake in a preheated oven at 325°F (160°C) for about 60-75 minutes, or until a toothpick inserted comes out clean.
Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
